Our team of dedicated and certified Baristas teaches Coffee Education classes for Home-Baristas and Coffee Lovers of all ages and skill levels. See below for class descriptions. 

We are happy to welcome rotating experts in specialty coffee as guest lecturers for special workshops and podium discussions.

THE HISTORY OF COFFEE 

The beauty and the bean - How Coffee turns the world around 

Lecture & Cupping / 1.5 hours / $20 per person / 6 min. - 20 max.

Did you know?

  • More than 2.25 billion cups of coffee are consumed worldwide every single day. 
  • Coffee laid the grounds for the French Revolution.
  • Women in England once filed a partition to make coffee illegal.
  • A goat that got wired is responsible for the rest of us following suit.

In this combined lecture and cupping, you will learn:

  • Where coffee originated and how it conquered the world to become the second most traded good after oil.
  • The chemistry inside the cherry: What we know about coffee and what we still do not. 
  • What makes a bean a specialty coffee: bean types, circumstances, growth, harvest, processing.
  • How trustworthy are certifications?

In this workshop you will compare different bean types by sight, smell, touch and taste.

We will "cup" samples from a local roaster in the way green coffee buyers do. Participants get to meet the roasters and take a coffee sample home.

SENSORY SKILLS

THE BASICS OF FLAVOR 

Lecture and Workshop / 2 hours / $50 per person / 4 min. -6 max.

Can't argue about taste? True, but you can learn how to express what YOU like much better. In this workshop you will learn how taste sensations are created by our brain, how it differs for different people and how to describe flavor, aroma and texture in coffee. You will:

  • Undergo a fun, blind taste test to explore how we process sensory input.
  • Get an introduction into the coffee flavor wheel which is used by professionals to pin down their impressions in a coffee, 
  • Learn the key components by which coffee is described and
  • Explore and define two different coffees, tasted by the group.

BREWING - Basics & Pour over Technique

UNDERSTANDing THE SCIENCE BEHIND COFFEe and the nuts & bolts of beans and pours

Lecture and Hands-On Brewing / 2 hours / $55 per person / 4 min. - 8 max. 

In this combined lecture/workshop, you will learn:

  • The six key factors to know and adjust when it comes to brewing
  • How pour overs are different from Immersion (steeping) methods
  • How to adjust the parameters according to your coffees origin and age
  • What the gold cup standard is and how it relates to coffee recipes for home
  • Over-extraction vs. Under-extraction. What happens in the coffee during the brewing process?
  • How to develop a brewing recipe with a partner and make a proper pour-over which the group will taste.

You will work with a V60 or Kalita Wave, Chemex and Karlsbad Brewer.

BREWING - Basics and Immersion Methods

Pressing, Rising, Steeping - how to use Aero Press and Co.

Lecture and Workshop / 2 hours / $55 per person / 4 min. - 8 max. 

In this extensive workshop you will learn:

  • The six key factors to know and adjust when it comes to brewing
  • How Immersion differs from pour over methods
  • How to adjust the parameters according to your coffees origin and age
  • How to develop your recipe with an Immersion tool
  • Over-extraction vs. Under-extraction. What happens in the coffee during the brewing process?
  • Why outcomes in taste differ widely between Immersion methods (much more than in pour over methods)

You will work hands on with a Siphon, Immersion Dripper, Aero Press, and French Press.

We will cover which method works best for which type of coffee and which method works well for which type of coffee person.
