Learn how to speak Coffee fluently and to brew it better!

We offer Coffee Education classes for home Baristas and Coffee Lovers of all ages and skill levels, as well as cuppings and tastings featuring rotating roasters. See below for class descriptions.

Instructors:

Owner Sandra Wolter is a certified Barista with the Specialty Coffee Association of Europe. Besides teaching hands-on classes, she designs menus and specialty drinks for coffee shops and consults Restaurants looking to enter the specialty coffee market.

We are happy to have rotating experts in specialty coffee as guest lecturers for our seasonal workshops. Instructors for seasonal workshops will be announced via email upon registration confirmation.

THE HISTORY OF COFFEE

GET TO KNOW THE BEAN THAT CHANGED THE WAY WE LIVE

Lecture and Cupping / 2 hours / $50 per person (plus Tax) / 6 min. - 10 max.

Did you know?

  • More than 2.25 billion cups of coffee are consumed worldwide every single day. 
  • Coffee laid the grounds for the French Revolution.
  • Women in England once filed a partition to make coffee illegal.
  • A goat that got wired is responsible for the rest of us following suit.

In this combined lecture and cupping, you will learn:

  • Where coffee originated and how it conquered the world to become the second most traded good after oil.
  • The chemistry inside the cherry: What we know about coffee and what we still do not. 
  • What makes a bean a specialty coffee: bean types, circumstances, growth, harvest, processing.
  • How trustworthy are certifications?

In this workshop you will compare different bean types by sight, smell, touch and taste.

We will "cup" a sample in the way roasters and green coffee buyers do.

SENSORY SKILLS

THE BASICS OF FLAVOR: IS THIS LEMON OR GREEN? 

Lecture and Workshop / 2 hours / $50 per person (plus Tax) / 4 min. -6 max.

In this workshop you will learn how taste is created, how it differs for different people and how to describe what you taste and prefer in coffee. You will:

  • Undergo a fun, blind taste test to explore how we process sensory input.
  • Get an introduction into the coffee flavor wheel which is used by professionals to pin down their impressions in a coffee, 
  • Learn the three key components by which coffee is described and
  • Explore and define two different coffees, tasted within the group.

BREWING - Basics & Background

THE BASICS IN YOUR CUP: UNDERSTAND THE SCIENCE BEHIND COFFEe

Lecture and Hands-On Brewing / 2 hours / $55 per person (plus Tax) / 4 min. - 8 max. 

In this combined lecture/workshop, you will learn:

  • The six key factors to know and adjust when it comes to brewing
  • How to adjust the parameters according to your coffees origin and age
  • What the gold cup standard is and how it relates to coffee recipes for home
  • Over-extraction vs. Under-extraction. What happens in the coffee during the brewing process?
  • How to develop a brewing recipe with a partner and make a proper pour-over which the group will taste.

BREWING - Immersion

LET'S STAY TOGETHER: COFFEE AND THE STAND STILL THAT PACKS FLAVOR IN YOUR CUP

Lecture and Workshop / 2 hours / $55 per person (plus Tax) / 3 min. - 4 max. 

In this extensive workshop you will learn:

  • How flavor develops during the brewing process
  • How immersion influences the flavor of coffee 
  • Why outcomes in taste differ between different immersion methods

You will work hands on with a Siphon, Immersion Dripper, Aero Press, and French Press.

We will discover which method works best for which type of coffee and which method works well for which type of coffee person.

Pour over Technique

JUST PASSING THROUGH: COFFEE AND THE MOVEMENT THAT CREATES FLAVOr

Lecture-Workshop / 2 hours / $55 per person (plus Tax) / 4 min. -6 max. 

In this fun, hands-on workshop you will learn:

  • How flavor develops during the brewing process
  • What drip does to the flavor and how you can control the outcome (movement, stirring, caffeine and acid extraction)
  • Which method works best for which coffee

You will experiment with a V60 pour over, Chemex and Karlsbad Brewer, develop your own recipe, and share it with the group.

TALK NERDY TO ME - Science and the Coffee Bean

GET TO KNOW YOUR COFFEE FROM THE OUTSIDE IN

Lecture and Cupping / 2 hours / $50 per person (plus Tax) / 6 min. -10 max. 

In this combined lecture and cupping you will learn:

  • What a perfect extraction is and why we need only a small amount of what is hidden in those beans
  • What we don't know about coffee yet and why that might be a good thing
  • What happens chemically during the roasting process
  • Which acids and bitters are released during roasting and brewing and which we actually want in our cup
  • The percentage of caffeine in relation to brewing methods warm and cold (or why an Americano is a pointless drink)
  • How decaf is made and if Robin Williams was right when he said: "Decaf is like masturbating with an oven mitt."
  • Effects on health, proven and unproven: the current state of affairs in scientific research on Coffee and cholesterin, fat burning, workouts, cancer, antioxidants and while we're at it - how much caffeine is needed to kill a human)
  • Coffee as an all-rounder - things to do with coffee outside the cup or after brewing 

During the lecture we will taste the actual acids and bitters extracted from a coffee bean, explore beans from green to fully roasted and finish by cupping the great tasting result of a well balanced roast.
